What’s for Dinner?

I'm sure some of you remember that I'm doing Weight Watchers. Any of you have tried to do any kind of diet know that it can be really hard to keep your eating habits on track. I was putting in my points, and have not done so well on my points today – I can't believe that 8 oz of Lemonade is 2 points – I wasted 4 points on this today! So for dinner today, I am going to make a quick and easy, very low fat, and very tasty dinner. It's actually my DH favorite summer meal. I thought I'd share the recipe with you.


Grilled Fish Packets

Serves 4

Weight Watchers Points Value Per Serving: 4


You will need one of those Reynolds Foil Bags for this, or you can make your own with Heavy Duty Foil.



Cooking Spray

4 fillets of Tilapia (or other mild, low fat, white fish)

1- 1 lb bag of Colored Bell Peppers & Onions (Fresh works great too, this just makes it quick)

8 oz Package of Sliced Mushrooms

1 medium Zucchini

1 medium Yellow Squash

1 pint Cherry Tomatoes, halved

25 Medium Green Olives (1/2 jar) sliced

4 cloves Garlic minced

2 Tsp Oregano

2 Lemons, quartered & seeds removed



  1. Pre-heat grill
  2. Spray Foil bag with non-stick cooking spray
  3. Place layers of peppers, onions, mushrooms, Zucchini, Squash & Tomatoes in the bag, making sure items that take longer to cook are on the bottom.
  4. Spread ½ of the garlic, olives, oregano & lemon over veggies.
  5. Place the fish on top of veggies
  6. Add remainder of garlic, olives, oregano & lemon over the top of the fish.
  7. Cook over medium heat for 20 minutes, flipping bag half way through.


You can sub other veggies if you don't like these ones, but I'd recommend leaving the olives even if you don't eat them (you can pick them out later), they give a great flavor to the recipe.


It's very filling & really makes a complete meal by itself, but if you've got the extra points it's great with a nice slice of crusty bread, or even some rice.

I had just the most fun time with my kids this morning! I took both of my DD's to our local museum. We actually have a membership to it, and we go to it regularly, as long as we've got more than one adult going! They are both pretty little still, my oldest is really good about following directions, and staying with her sister, but the youngest is really too little to be able to expect that just yet. Well, today I chanced it. I took them both on my own, and it was great! They had a blast playing with all of the exhibits, learning, creating & exploring. They stayed together, and both listened so well. I still can't get the youngest to hold DD1's hand, but I came up with a little trick before I went. I took a purple, fabric headband - you know the thick kind that is stretchy? - I had each of them hold on to an end of it, and DD2 also held my hand. And ya know what? NO TEMPER TANTRUMS!!! I couldn't believe it, I was fully prepared to leave if they were not behaving, but we stayed for several hours.

We finally left after lunch and a merry-go-round ride. This actually resulted in a minor tantrum from DD2, but I was not surprised. She was exhausted, and it was getting to be her nap time. Can you believe that with all my nervousness about going - I forgot my camera! :-( What kinda scrapper am I anyhow???? Oh well, there is always next time....

I also wanted to give you an update on my friends brother-in-law that I blogged about recently. There really is not a lot of news here. He is still holding on, but not conscious. He has also gotten a staph. (sp?) infection. But, there are some positive signs, he seems to be trying to mouth words, as if to let them know he is still in there, but just can't make his mind and body connect. His family could still use your prayers. Thanks so much to those of you who have asked about him and offered prayers for him.

Now I'm sure you all know that I don't normally post contests, challenges or CT/ Designer calls on my blog - it's just too much work, and I don't like to play favorites, and only pick and choose. Couch Potato Update:
I'm still doing the Couch Potato to 5K running progam. This am I decided I'd had enough of the elements. Between the heat & the garbage trucks I decided it would be a good day to take it to the gym. Today's program was a 5 minute walking warm up, then alternate 90 sec of jogging with 2 minutes of walking - for a total of 20 minutes.

It went really well today - not quite as winded or sweaty. It was really nice to see how fast I was going. I walked at 3.2 mph, and ran at 5 mph (is that even really a jogging speed? ) I get to the end of it, and think - Wow - that was great - until I looked at the rest of the info the treadmill tracks... distance 1.6 miles, and calories burned - 150 - 150 ??? is that it???? Oh, that part really sucked! Oh well, 150 less to work off.
